1) FINO - Alexander Jules, 'Fino 4/65'

An amazing barrel-selected sherry, chosen from 9 barrels, with 10 years of age in solera! Alexander Jules sherries are barrel selected bottlings by Alex Russan. Alex searches the Sherry Triangle for exceptional soleras of unique composition or circumstance, tasting each barrel in the solera, marking with chalk those he feels to be the most complex and elegant, or those that reflect the profile he would like to bring out from within that solera. All bottlings are en rama, being only gently filtered or entirely unfiltered, with no other treatments or additions.

One saca per year, all fruit from Jerezano vineyards. Bottled "en rama" with a gentle filtration to preclude flor development in bottle. No SO2, fining or cold stabilization.

3) AMONTILLADO - César Florido, Amontillado

Located just outside the Sherry Triangle in the seaside town of Chipiona, this is a very coastal Amontillado, delicate, fruity, and an average of 8 years of ageing.

4) OLOROSO - Gutierrez Y Colosia, 'Sangre Y Trabajadero'

One of Sherry’s most iconic wines. Aged for an average of 12 years in the solera. The Sangre y Trabajadero solera began in the town of Jerez in the 1800s as the solera of a cooper whose trabajadero, a cooper’s yard where butts are constructed, was located on Calle Sangre, the street where the butchers were located. Named after this location, the oloroso was a favorite of the butchers and other Jerezanos alike. The solera was first sold to Bodega Lacave in Cadiz before being sold to Bodega Cuvillo in Puerto. After Cuvillo went bankrupt in 1982, Gutierrez Colosia purchased the solera. To this day, new ships built in the bay of Cadiz are ceremonially launched not with a bottle of Champagne, but with a bottle of Sangre y Trabajadero.

**5) PALO CORTADO - González Byass, 'Leonor' **

Leonor Palo Cortado is a classic an accessible expression of this mysteriious category by one of the region's most iconic houses. Aged for over 12 years it has fine aromas of wood, vanilla and almonds. The palate is nutty and perfectly integrated with a long finish. Ideal with mature cheeses, good ham and nuts but also stands up well to red meats.

6) SOMETHING SWEET - Lustau, East India Solera, Oloroso & PX blend, 15yrs

One of the great icons of Lustau. Its aging process mimics that of some 17th century wines developed during transatlantic journeys to distant Spanish colonies. Dark mahogany colour with bronze hues. Concentrated aromas of ripe fruit, mocha, cacao and toffee. Very complex on the palate, with clean acidity. Taste of raisins, nuts and candied orange. To achieve this, after aging separately in their own soleras, the Oloroso and Pedro Ximénez that comprise it, are combined and undergo a second aging process in a solera of 33 barrels at the Sacristía de Bodegas Lustau, with its elevated humidity and temperatures that replicate the climatic conditions that the wines would have experienced on their journeys. 80% Palomino & 20% Pedro Ximénez • Average Age 15 years
